The ancient medicinal properties of turmeric have seen its popularity sour in recent years. Turmeric does wonders for the hair, the brain, body’s internal wellbeing, and skin. For this reason, the curcumin properties of this powerful orange powder have woven themselves into the health industry manifesting in turmeric powders, capsules and now innovative new dishes.
The recipe below for turmeric rice is just one of the many ways you can enjoy the medicinal wonders of turmeric easily, simply and perfect for the colder months.
Ingredients:
- 3 Large cups of rice
- Turmeric Powder
- Salt
- Pepper
- Garlic
- Vegeta Gourmet Seasoning
- 2 Large diced chicken breast
- 1 large onion or 2 smalls.
- 1 Large capsicum either green, red or yellow.
- Cup of peas
- Cooking oil in either vegetable or canola
- Half a cup of diced carrots & corn
- Cream (Optional)

Serving size: 4 to 6
Cooking time: 1 hour to 1 hour 30 minutes
How to Cook
Step 1:
Heat the pan with oil and 1 diced large onions or 2 small onions, followed by 1 large capsicum. Cook the onions and the capsicum on medium heat until reaching a slightly brown colour.
Step 2:
Add the diced chicken breast onto the caramelized onion and capsicum – cooking with medium heat until the chicken breast turns white for 5-7 minutes.
Step 3:
Whilst the chicken cooks, it is time to start seasoning with a small tablespoon of salt and pepper, 1 small tablespoon of vegeta gourmet vegetable stock, and 4 fresh crushed garlic cloves. Switch the cooking heat to low to medium. Leave to marinate into the chicken for 5 minutes.
Step 4:
Add 2 to 2.5 large spoons of turmeric powder to the pan. Use a spatula to ensure the powder mixes evenly into the pan with the chicken, onions and capsicum. Add more if desired but do not overpower the dish with turmeric.
Step 5:
This is followed by adding a cup of peas, carrots, corn and any other favourite vegetable. Ideally, 3 types of vegetables to not overpower the dish and verge it on becoming a vegetable dish. Use a spatula to ensure the vegetables are mixed well with the turmeric powder.
Step 6:
Cook 2 cups of rice so the rice is fresh in time for the turmeric curry dish.
Step 7:
Use a large spoon to taste the balancing of the dish’s flavour against the turmeric powder, salt, pepper, and Vegeta stock. Adjust if necessary.
Step 8:
Serve the dish on top of the rice, and parsley on top for extra flavouring and colour and or cream.
